When I was a child, I used to go and pick wild blackberries with my mother and my little brother at the end of Summer. So many joyful memories! And now, nothing makes me happier than picking blackberries with my own kids to make some jam or some desserts… It’s a very special moment as we enjoy last days of long summer holidays and already see the first signs of Autumn…

Here are some photos of our last picking into the woods and a very easy-to-make recipe with blackerries : some delicious fruit bars that kids will love for an after-school snack!!

BLACKBERRY BARS RECIPE

Preparation time : 10 minutes

Baking time : 35 minutes

Refrigerating time : 2 hrs.

Crust

  • 200 g flour
  • 100 g caster sugar
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 75 g cold butter cut into dices
  • 1 egg yolk

Filling

  • 250 g fresh or frozen blackberries
  • 3 tablespoons caster sugar
  • 2 teaspoons cornstach
  • 2 tablespoons lemon juice

Make the crust. Preheat the oven to 200 deg. Celsius. Take a rectangular or square tin. Line with parchment paper.

Mix the flour, sugar, baking powder, salt and vanilla in a large bowl. Add the butter and the egg yolk and combine with your fingers until the dough is crumbly. Press two-third of the dough into the bottom of the tin.

Make the filling. Stir together the blackberries, sugar, lemon juice and cornstach in a bowl. Spread over the dough.

Sprinkle the remaining dough on top of it.
Bake for 35 minutes. Let completely cool, then refrigerate for two hours. Cut the cake in bars or squares. Perfect for an after-school snack!!
