Easy meal #12 : roasted pumpkin with hazelnuts.
Just the day after Halloween, to celebrate Her Majesty the Pumpkin, here you can read a very easy and family recipe, both scrumptious and healthy!
Preparation time : 10 minutes
Cooking time : 50 minutes at 180 °C.
Ingredients (servings 4) :
- 800 g pumpkin
- 1 bunch of fresh parsley
- 1 big handful of hazelnuts
- 2 tablespoons of olive oil
- 2 garlic cloves
- 80 g Parmesan cheese
- Salt and pepper
Preheat the oven at 180 °C. Wash the pumpkin and slice it. Smash the garlic and rub it on the pumpkin. Then put the slices into a big oven tin. Salt, pepper and pour in the olive oil. Mince the parsley with a knife, crush the hazelnuts and grate the Parmesan cheese. To finish, sprinkle the herbs, the cheese and the hazelnuts on top of the pumpkin slices.
Cook for about 50 minutes at 180 °C til the pumkin is soft.
Delicious to eat alone as a main dish, or with quinoa or millet for a very easy dinner.
