Easy meal #16 : ‘Bright skin’ soup.
With such a cold and grey wheather, we just want to do one thing : stay at home like in a cocoon! This is why I try to find both scrumptious and healthy recipes, which can comfort and stimulate us at the same time. One of my favourites recipes is a soup with winter squash, sweet potato and carrots. Its sweet taste and its creamy texture makes it appreciated both by kids and grown-ups! … And as it’s full of carotène, it makes the skin look bright 😉 !
Preparation time : 5 minutes
Cooking time : 30 minutes
- 1 sweet potato
- 2 carrots
- 1 winter squash
- 1 yellow onion
- 1 garlic clove
- 15 cl coco milk
- 1 tablespoon olive oil
- Salt, pepper (and cinnamon).
Cut the winter squash into big dices (don’t peel it). Peel the carrots, the sweet potato, the onion and the garlic and cut them into dices. Pour some olive oil in a big cooking pot and fry the onion and the garlic with all the other vegetables for 2 or 3 minutes. Salt, pepper and add the water. Cover the pot and let the soup cook for around 30 minutes.
When mixing the soup, add the coco milk. In option, you can add some cinnamon if you want to just before serving.
Delicious for a complete meal at night with some toasted farmhouse bread. All the family members will love it !!
