Easy meal #17 : Winter vegetable curry.
All along the years, I’ve been more and more appreciating winter vegetable,… even more than the summer ones! You can make many recipes with them and they’re very tasteful! So this is a curry recipe which uses a lot of these vegetables. Of course, if you respect the modus operandi, you can choose other vegetable. This recipe is fast, easy and very tasteful…
Preparation time : 10 minutes
Cooking time : about 1 hour
Ingredients (servings 4-6 )
- 1 small cauliflower
- 4 turnips
- 3 carrots
- 1 sweet potato
- Curry spices (‘Curry Madras’ from Roellinger : the best)
- 2 tablespoons coco oil (Biona)
- 400 ml coco milk
- 1 onion and 1 garlic clove
- Salt and pepper.
Start preparing the vegetable. Cut the cauliflowers into small parts. Peel and cut the turnips, the carrots, the sweet potato into dices. Slice the garlic and the onion.
In a big cooker, heat the coco oil and fry the onion and the garlic. Add the curry powder. Then, pour in the vegetable and fry it while stirring for about 3 minutes. Salt and pepper. Pour the coco milk, cover and lower the heat. Let cook for about one hour, till the vegetable is soft (but not like a purée). Before serving, you can add some fresh coriander leaves.
You can eat this curry with many different proteins : some brown rice, filet mignon or a steam fish for instance…
