Easy meal #19 : Spanish tortilla

As my in-laws are from San Sebastian in Spain, I had the chance to learn the traditional recipe of the Spanish tortilla at the root 😉 !  This recipe is really easy to make, tasty and ideal as a pre-dinner or for a casual dinner with friends in summer evenings because it displays very nicely on the table ! It is delicious warm as well as cold and can easily be preserved a couple of days…

Preparation time : 5 minutes
Cooking time : 35 minutes

Ingredients (for 5-6 people) :

  • 4 big potatoes (800 grams approximately )
  • 1 big onion (yellow or white)
  • 6 eggs
  • Canned grilled sweet peppers (Pimientos del Piquillo)
  • Salt, pepper
  • Olive oil
  • Two light frying pans (to turn over the tortilla easily)

Peel and wash the potatoes. Cut them into thin slices (or small cubes if you prefer). Peel and slice thinly the onion.

In a frying pan, glaze the onion in two soup spoons of olive oil on a low heat for 3 minutes approximately.

Then add the potatoes, salt, pepper and stir it vigorously. Cover and cook it on a low heat for twenty minutes approximately while stirring it from time to time.

The cooking is done when the potatoes are really tender. You can add the grilled sweet peppers, cut in thin slices, at the very end.

Break and whip the eggds. Salt lightly. Then add the eggs to the potatoes. Cook it for 5 minutes approximately, then turn over the tortilla using another frying pan. Cook the tortilla in that second frying pan during another 5 minutes. It is ready !

The tortilla is delicious with a green salad and some ham Pata Negra… You can also savour it during aperitif cut in cubes.  A treat whatever you choose !
