Easy meal #21 : Goat cheese and eggplant rolls

It’s been a long time since I haven’t made any new recipe because of very busy weeks… This recipe is alI need for summertime : easy -to-make, healthy, and playfuf with kids. If you don’t like goat cheese, you can use whatever fresh cheese you prefer, of course…

Preparation time : 5 minutes
Baking time : 20 minutes (5 min + 15 min)

Ingredients (servings 4)

  • 2 big eggplants
  • 200 g fresh goat cheese
  • 1 tablespoon single cream
  • Salt and pepper
  • A few fresh mint leaves
  • 2 tablespoons olive oil
  • Parmesan cheese (optional)

Preheat the oven at 180°C. Slice the eggplant in their lengh (fine slices). Then fry them at low heat in a big pan with a tablespoon of olive oil for about 5 minutes to tenderize them. Stir them time to time to prevent the eggplant to burn.

In the meantime, mix  the cheese, the cream and the mint in a bowl. Salt and pepper. Add the the finely cut mint leaves.

When the eggplant are done, let them cool down at room temperature. Then add a tablespon of cheese on each eggplant’s slice. Roll them and place them in a baking plate. Poor a tablespoon of olive oil on top of them and add, if you want, some parmesan cheese.

Cook the eggplants rolls in the oven for abour 20 minutes at 180 °C. You can eat the rolls hot or warm, as an appetizer.
