Easy meal #24 : egg and tuba rice pancakes
This new ‘Easy Meal’ recipe is really great for an easy week dinner at home with the kids : fast, healthy and complete… At home it’s a success : everybody loves it!
Preparation time : 10 minutes
Cooking time : 20 minutes + 5 minutes
Ingredients (servings 4) :
- 4 rice sheets
- 3 potatoes
- 2 natural tuna cans (190 g each)
- 2 egg yolks
- Fresh herbs : coriander, mint, parsley, as you prefer
- 2 tablespoons frying oil
- Salt, pepper
Prepare the stuffing. Peel and boil the potatoes till they’re tender (for about 20 minutes). Then crush the tuna. Add the egg yolks and mix all the ingredients together. Then cut and add the fresh herbs, salt and pepper. Stir well.
Cut in two each rice sheet to obtain eight sheets. Put a tablespoon of stuffing on top of each sheet. Fold it : right corner to center, then left corner, then top and bottom. Press the sheet with the fingers.
In a big pan, fry the pancakes (briques) for about 3 minutes on each side (start by the underside to maintain the pancake closed).
Ready!!! Delicious with a fresh salad, grated carrots or a vegetable soup for a light dinner…
