Easy meal #9 : fig & goat cheese bruschetta

The SC Family has come back to Paris but summer is still on! So, here you can find a very tasteful summer recipe with goat cheese and figs. You can use green or black figs (sweater) as you wish…

This bruschetta is delicious as a main dish with a small salad, or as snack (smaller portions).

N.B. : the ingredients I give here are made for one serving (adult).

Preparation time : 5 minutes
Cooking time (for the onions) : 25 minutes

Ingredients (one bruschetta) :

  • 1 large slice of bread
  • 50 g fresh goat cheese
  • 1 violet onion (medium size)
  • 2 figs
  • 1 garlic
  • few rosemary sprigs
  • Salt and pepper
  • Olive oil

Slice the onion and fry it with some olive oil in a pan for about 25 minutes (at low heat). In the meantime, toast the bread and rub the garlic on top of it. Then add the caramelized onion, the goat cheese and the figs cut into quarters. Spread some rosemary. Add salt, pepper and olive oil as ou like it.
