French traditional caramel custard

Here is a French traditional recipe that reminds us of childhood. The caramel flan exists in multiple versions, but after numerous tests, this recipe given by my cousin Pascale, is my favorite: it’s the easiest and the most delicious one I’ve ever known! The result is perfect : smooth and tasty.

Preparation time: 10 minutes

Cooking time: 45 minutes

Ingredients (5-6 people)

1/2 l whole milk
4 eggs
1 vanilla pod
75 g brown sugar
16 pieces of sugar + 2 tablespoons water for the caramel

Preheat the oven to 150 ° C and place a large plate inside with some water for the Bain Marie.

Make the caramel. Caramelize the sugar pieces on medium heat with 2 to 3 tablespoons of water. When the caramel is golden, pour it in a tin (rectangular or round). You can also opt for individual small round molds.
Then prepare the custard. Boil the milk with the vanilla pod. Then let the vanilla infuse while the milk is cooling down.
In the meantime, break the eggs into a bowl and add the sugar. Beat well until the mixture is smooth and foamy. Then add the cooled milk and beat again.

Finally, pour the mixture into the tin and bake in water bath about 45 minutes at 150 ° C.

Allow to cool before removing the custard from the tin. Use a knife to help removing the custard.

This simple recipe is delicious both as a dessert or as an afternoon snack.
