Friday cake #15 : raspberry blondie
This is a good and seasonal alternative to traditonal brownies with white chocolate and raspberries.
Preparation time : 10 minutes
Cooking time : 35-40 minutes
- 150 g white chocolate
- 125 g unsalted butter
- 150 g caster sugar
- 2 eggs
- 1 1/2 teaspoons vanilla powder
- 200 g plain flour
- A pince of salt
- 125 g fresh raspberries
Preheat the oven to 170 °C (325 °F) . Melt the chocolate and butter together in the micro-waves or in the bain-marie. Leave until melted and smooth.
Remove from the heat. Add the sugar and stir until well incorporated. Add the eggs and vanilla powder, stirring briskly. Add the flour, salt and spoon the mixture into a 20 cm baking tray. Disperse the raspberries in the dough.
Bake in the preheated oven for about 35-40 minutes till the centre is still soft. Leave to cool completely.
