Friday cake #17 : madeleines & straberry soup

Here you can find a very traditional French recipe a dear friend of mine gave to me years ago : madeleines (shell-shaped cookies). They are delicious to eat during summer with a fresh strawberry soup…

Preparation time : 15 minutes
Resting time : 1H30
Cooking time : 8 minutes

Ingredients

For the madeleines (around 40 pièces) : 

  • 225 g melted butter
  • 4 eggs
  • 230 g caster sugar
  • 275 g plain flour
  • 15 g baking powder
  • Butter for the baking tins

For the strawberry soup (serving 4) : 

  • 500 g strawberries
  • 50 g brown sugar
  • Half a lemon juice
  • 4 basil leaves

TO MAKE THE MADELEINES

To succeed in making good madeleines, all is about resting time and baking. The dough is quite simple : melt the butter into the micro-waves and let it rest at room temperature for an hour. Mix the eggs with the sugar till the dough is creamy.  Add the flour and the baking power. Stir together. Let the dough rest at room temperature for an hour. Then, add the butter and mix well. Put the preparation into the fridge for at least 30 minutes.

In the meantime, preheat the oven at 240°C. Grease the baking tins (personally, I like silicone tins, very easy to use). Pour about a teaspoon of dough in each tin and cook for about 8 minutes for golden madeleines, or just 7 for spongier cakes). After baking, put the madeleines on a rail to cool down.

TO MAKE THE STRAWBERRY SOUP :

Very easy : wash and tail the strawberries. Mix them with the sugar and the lemon juice. Put  the soup into the fridge for at least 30 minutes. Add the basil leaves just before serving.
