Friday cake #21 : cinnamon&basil peach soup

This a an easy and refreshing recipe that you can make whereever you are spending your holidays!! You can add other spices if you want : instead of basil and cinnamon, opt for lemon and verbena…, or only vanilla!

Preparation time : 25 minutes
Time in fridge : 30 minutes

Ingredients (Serving 4) : 

  • 5 white peaches
  • 200 ml water
  • 60 g brown sugar
  • 1 teaspoon cinnamon
  • 10 basil leaves

Peal off the peaches and slice them in quarters. Pour the water and the sugar in a sacepan et boil it. Then let the syrup thicken for 10 minutes at slow heat. Slice the basil leaves and put them in the syrup with the cinnamon. Let them infuse for 10 minutes. Then pour the syrup on the peaches. Put the soup in the fridge for at least 30 minutes to cool down.
