Friday cake #24 : very easy-to-make birthday cake.
This week, as you may have seen on my Instagram account, it was my son’s birthday! For this occasion, I made a birthday cake : lots of pressure on me because this kid is very gourmand! …And I made it!
Here it is this easy-to-make recipe…
Preparation time : 15 minutes
Baking time : 45 minutes
Ingredients (servings 8) :
- 5 eggs
- 130 g plain flour
- 120 g caster sugar
- 175 g butter
- 200 g dark chocolate ( keep one small piece to decorate the cake)
- 100 ml cold single cream
- 200 g mascarpone cheese
- 50 g icing sugar
- Chocolate curls (on small piece of chocolate)
Preheat the oven at 170 °C.
Separate the yolks from the whites. Whip the egg-whites to a light mousse with a pinch of salt. In a big bowl, beat the yolks with the sugar. Then add the flour and mix it. Melt the chocolate with the butter cut into dices ( bain-marie or micro-waves : 1 minute at 900W) . Stir well the butter and the chocolate and add them to the flour and sugar preparation. Mix well. Then add progressively the egg-whites with careful precaution to obtain a frothing dough. Pour the dough in 20 cm baking tin. Bake it for around 45 minutes at 170°C. Then let the cake cool at room temperature and remove it from the tin.
To prepare the cream : beat the cold single cream with the icing sugar to make a Chantilly. Then add the mascarpone cheese and beat it carefully. Put the cream on the top of the cake. You can add some chocolate curls if you want. Store the cake into the fridge.
