Friday cake #25 : apple bread.

Today, Friday is an apple bread, perfect as a snack or a dessert for kids : not to fat, nor sugary!

It doesn’t take much time to make it, but you have to make it in advance!

Preparation time : 10 minutes
Resting time : 1hour and a half  + 45 minutes
Baking time : 25 minutes

Ingredients : 

For the dough :

  • 210 g plain flour
  • 160 ml milk
  • 30 g melted butter
  • 30 g caster sugar
  • 1 teaspoon 1/2 yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 or 3 apples (depending on their size)

For the topping :

  • 50 g melted butter
  • 1/2 teaspoon ground cinnamon
  • 50 g brown sugar

Place flour, sugar, salt, cinnamon, and yeast in a stand mixer with the dough hook attached. Stir to combine. In a small bowl add your melted butter into your warm milk. Then, with the mixer on low, add this mixture to the flour mixture until it forms a soft dough ball.Knead with the mixer for about 4 minutes. Then cover loosely with plastic wrap. Let rise in a warm area for 1.1/2 hours or until doubled in size.

Then preheat the oven at 160 °C (350°F). Pour some flour on your hands and knead the dough briefly. Grease a tin or a a baking gray and make a disc with the dough on it (diameter : 25 cm approx. )  Peal and slice the apples, then put and dig them on the dough. Let the dough rest once again at room temperature for 45 minutes.

Bake for 20-25 minutes until golden brown.

For the topping, mix cinnamon and sugar together in a small bowl. Once the bread is removed from the oven, brush the top with melted butter and then sprinkle with the cinnamon and sugar mixture.
