Friday cake #26 : Pears & toffee cake.
Today, this is a seasonal, easy and ‘kids friendly’ recipe : pears and toffee cake. Perfect for a tea time or a snack in the afternoon!
Preparation time : 10 minutes
Baking time : 1 hour
Ingredients (servings 4-6 ) :
- 2 big pears
- 4 eggs
- 140 g caster sugar
- 125 g melted butter
- 150 g flour
- 1 teaspoon baking powder
For the toffee sauce :
- 4 tablespoons caster or brown sugar
- 2 tablespoons of water
- 25 g salted butter
- A round baking tin (20 cm diameter)
Preheat the oven at 170°C.
Make the dough. In a big bowl, stir the sugar and the eggs till it’s foaming. Then add the flour and the baking powder. Mix very well. Melt the butter ans add it to the preparation. Don’t stop mixing. Finally, pour the dough in the baking tin and add the pears.
Bake the cake for one hour at 170 °C. Then let it cool. Remove it from the tin and place it in a plate.
Now make the toffee sauce : in a small saucepan, pour the sugar and the water. Cook at médium heat till the toffee sauce is yellow. Then add the butter and let it melt out of the heat. Pour the caramel sauce immediately on top of the cake.
