Friday cake #28 : Mango delight


How delightful it is to rest just one moment in front of the computer!

As time’s flying more than ever during Christmas time, let’s make a very easy and fast recipe for Christmas Eve, made up of mango, mascarpone cheese and fromage blanc. Delicious… and light!

Preparation time  : 10 minutes

Ingredients (serving  4-5 ) : 

  • 1 big mango (From Brasil or Peru)
  • 6 crackers like French Petits Beurres
  • 250 g  mascarpone cheese
  • 250 g fromage blanc
  • 2-3 tablespoons agave syrup
  • 1 pinch of vanilla powder

Start with the cream : mix together the fromage blanc, mascarpone cheese, agave syrup and vanilla till it’s light and fluffy. Then crush the crakers and cut the mango into small dices.

Take four glasses or four little bowls. Add the ingredients as follows : first the crackers, then the cream and, to finish, the mango. You can add some golden or silvered sugar to decorate on the top.

Trick : prepare all your ingredients a long time before serving and put them together just before serving to let the crackers… crack!
