Friday cake #6 : banana cake

Banana loaf recipe inspired by the Hummingbird bakery cookbook. 

Making : 15 minutes
Cooking : 1 hour


  • 270 g light brown sugar
  • 2 eggs
  • 2 mashed bananas
  • 280 g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon cinnamon powder
  • 1 teaspoon ginger powder

Preheat the oven to 170°C. Put together the sugar and the eggs. Then add the mashed bananas. Beat until well uncorporated. Add the flour, baking powder, bicarbonate of soda, cinnamon and ginger to sugar mixture. Mix it thouroughly. Pour in the melted butter and beat until all the ingredients are well mixed.

Pour the mixture into a cake tin. Bake for about 1 hour. Leave the cake cool slightly before removing it from the tin.
