Friday cake #10 : peanut butter cookies

Here you can find one of my favourite peanut butter cookies recipe! We love eating them at home with rice milk dusted with carob, when the children take a snack.

Preparation time : 10 minutes
Cooking time : 10 minutes

Ingredients (for 24 cookies) :

  • 225 g unsalted butter at room temperature
  • 200 g caster sugar
  • 200 g soft light brown sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 240 g crunchy peanut butter
  • 340 g plain flour
  •  2 1/2 teaspoons bicarbonate of soda
  • 1/2 teaspoon salt
  • 75 g dark chocolate, chopped
  • greaseproof paper

Preheat the oven to 170 °C (325 °F). Mix butter with sugars and cream until light and fluffy. Add the eggs one at a time, fixing well. Turn the mixer down to slow speed and beat in the vanilla extract and peanut butter. Add the flour, bicarbonate of soda and salt. Mix well. Stir in the chocolate until evenly dispersed.

Arrange 6 equal amounts of cookie dough on a prepared baking tray. Make sure that the cookies are spread apart. Bake for about 10 minutes, until they’re golden brown. Leave the cookies to cool slightly on the tray before turning out on a plate to cool completely. Do it again 3 more times.

The cookies should be soft and creamy.

  • Mmmm… Ça m’a l’air délicieux! J’ai une fois fait des cookies comme ça avec Tomás et c’était vraiment amusant. En plus, il était fier de goûter les cookies qu’il avait lui même préparées… 🙂
