Here is a very light dish to stop feeling guilty after long and generous Summer “apéritif”s … I’ve made it several times during our holiday in Puglia and, each time, everyone loved it! It’s easy to make, quick and rather aesthetical;)
Preparation time: 10 minutes
Cooking time: 5 minutes (3min + 2 min)
Ingredients for 4 people :
- 150g medium or small shrimp (3-4 per person)
- 3 medium zucchini
- 15 cl white wine (optional)
- 2 tablespoons oil
- Fresh parsley
- Salt & pepper
Wash the courgettes, but keep the skin. Using a mandoline, cut them into thin strips. Leave aside.
Shell the shrimp. Crush a clove of garlic and fry it gently with some olive oil. Then fry the shrimps for 2-3 minutes. Keep them apart. Deglaze the juices with white wine and cook the zucchini for 2 minutes, no more. Salt and pepper.
Place the zucchini on a plate, then put the shrimp on top of them. Sprinkle with finely chopped parsley. There you go!! You can eat this dish warm, as a starter, or as main course if you want a light meal;)
