Black rice with pumpkin

Here we are at the beginning of March, still time to enjoy pumpkin through many different recipes … Here is a recipe that children love, very simple and tasty.

Why black rice? Because this rice, appreciated for millennia in China and today in Italy, is a great food, very tasty, which does not stick and goes very well with vegetables. In addition, it is rich in vitamins B and E, minerals, fiber and antioxidants, … and low in sugar. It has a small taste of baked bread that we love.

The black rice and potimarron blend is particularly successful, both sweet and full of flavor. Perfect for dinner!

Preparation time: 10 minutes

Cooking time: between 20 and 45 minutes (depending on the type of black rice)

Ingredients for 4-5 people :

  • 250 g of black rice
  • 1/2 pumpkin
  • 2 tablespoons olive oil
  • Salt and pepper
  • 1 yellow onion
  • Some sprigs of coriander

Cook the rice for the time indicated and then rinse it. Meanwhile, cut half a pumpkin  and cut it in dices. Fry it with the chopped onion and olive oil. Salt, pepper and cook on low heat for about 20 minutes.

Mix the rice with pumpkin. Sprinkle with a few sprigs of coriander.

It’s ready! Ultra easy, fast to make… and delicious!
