The butternut squash soup with parmesan by Kristin (New-York)

Cut into cubes 3 pounds of butternut squash (peeled and seeded) . Salt and pour 2 tablespoons of olive oil on them. Roast them for 30 minutes in the oven at 400 °F (15 minutes on each side).  In a large stockpot, heat a tablespoon of butter and a tablespoon of olive oil over medium heat. Add one yellow onion, chopped stalks of celery, chopped leaves of sage. Stir occasionally, until the vegetables are translucent and tender, 10 minutes. Add the squash, 6 cups of chicken broth, and a pinch of salt and bring to a boil. Lower heat and simmer for 30 minutes or until the liquid is flavorful. Remove from heat. Hand blend the soup in batches until smooth. Return to the pot and keep warm. Top with grated Parmesan.

 ‘Pasta con brocoli’ by Alice (London)

Cut the brocoli into dices and pour them into boiling water with small pasta (such as pasta shells or stars). Cook them till the pasta is al dente. Then drain them while keeping a small quantity of water with the pasta to starch it.  Put the pasta with the water in a pan and add a tablespoon of single cream. Stir it and cover the saucepan for a few minutes. It’s very soft and creamy! I sometimes add some smoked salmon, ham or cheese. 

The Shrek Soup by Céclie (Paris)

It’s very easy to make : you can use the Thermomix and pour in 500 g of frozen peas with 250 ml of water and some chicken stock. At the end, you can add some cream. Mix it. It takes only 15 minutes to make it! You can eat it with an egg

Fresh salmon with soja sauce and orange juice by Valérie (London)

We make a marinade with  fresh salmon with orange juice, soja sauce and dill. We let it rest for 10 minutes then we cook this preparation in the micro-waves for 3 minutes and we eat it with rice : so delicious!
