Night is falling early these days and evening temperatures are decreasing rapidly … In short, it’s time to welcome soup again! 🙂 Nothing better to warm up the body and fill it up with good vitamins to fight against viruses! And to remain seasonal, I propose a recipe based on celeriac and chestnuts, made in only 15 minutes.
- Preparation time: 10 minutes
- Cooking time: 15 minutes
- 1/2 celeriac
- 400 ml of water
- 400 ml whole milk
- 10 large chestnuts
- 2 tablespoons of single cream
- 1 teaspoon ground ginger (or fresh grated ginger)
- Salt and pepper
For this recipe, I’ve used the Cook Processor by Kitchen Aid, which permits to go faster and make a very creamy soup.
Prepare the chestnuts. Split them slightly in the length. Then bake them for 10 minutes at 200 ° C.
Meanwhile, peel the celeriac and cut it into large cubes. Cook in the Cook Processor with milk and water. Choose the “Boil” option, temperature 95 ° C for 15 minutes (you can also boil the celeriac in a saucepan for 15-20 minutes).
Then, peel the chestnuts and add them to the celeriac + water + milk mixture. Mix in ‘Pulse’ mode for about 30 seconds. Finally add ginger, salt and pepper, then 2 tablespoons of single cream. Mix. It’s ready! It is even better with some Boletus mushrooms or grilles Serrano nam on top of the soup…
The soup is very easy to make with the Cook Processor. You can however use a saucepan and a traditional blender if you wish.
