Friday cake #14 : cherry & ricotta fudge cake
June is the Cherry month… And I’m completely mad about cherries I must say ! Here you can find an easy and very tasteful recipe using cherries, Ricotta cheese and almonds…
Preparation time : 10 minutes
Cooking time : around 30 minutes
- 200 g plain flour
- 180 g caster sugar
- 200 g Ricotta cheese (or Philadelphia chees)
- 3 eggs
- 80 g unsalted butter
- Around 40 cherries
- 1 teaspoon baking powder
- 1 teaspoon vanilla powder
- 100 g flaked almonds
- 1 tablespoon brown sugar
Mix together sugar, eggs and Ricotta cheese. Add flour, baking powder and vanilla. Stir well together. Then add the melted butter and mix together till the dough is smooth.
Pour the preparation into a 20 cm diameter baking pan. Put the cherries onto the dough and dig them a little. Sprinkle the almonds and brown sugar on top of the cake.
Cook the cake for about 30 minutes at 170 °C (340 °F). You can eat it when it’s getting cold… Delicious with vanilla ice cream!
